How the Lab works.
Each file starts with a question home brewers ask and ends with a setting you can brew with. In between are the studies’ own numbers.
Papers first
Peer-reviewed studies come first, open access where possible, so you can read what we read. We read the whole paper and check its tables against its text. Industry and technical sources count when they publish their method and their numbers. A finding is credited to the study that measured it, not to the one that repeated it.
Numbers from the tables
Charts are re-plotted from values printed in a paper’s text or tables, and each one has its data table and its source underneath. We never trace numbers off someone else’s graph. If a result only exists as a figure, the file describes it in words. Every key number links to the paper it came from, and quotes are rare and short.

Most papers test one ratio, one temperature and a handful of coffees. Each file lists what its studies left out, and that list is where our own tests start.
